8 oz (225g) pasta of your choice (fettuccine, penne, or spaghetti)

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 lemon (zest and juice)

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Optional: crushed red pepper flakes for a kick

Fresh basil or parsley, for garnish

Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the starchy pasta water, then drain the pasta and set it aside.
