12 oz fettuccine or linguine pasta

1 can (14 oz) artichoke hearts, drained and roughly chopped

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 cup heavy cream

Zest and juice of 1 large lemon (about 2-3 tablespoons juice)

½ cup freshly grated Parmesan cheese

Salt and freshly cracked black pepper to taste

1 cup fresh spinach, roughly chopped

¼ cup fresh basil leaves, chopped (optional for garnish)

Extra lemon slices, for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Before draining, carefully reserve ¾ cup of the pasta water for later. Drain the pasta, then return it to the pot, covering it to keep warm.

    Sauté Aromatics: In a spacious skillet, heat the extra virgin olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 30 seconds or until fragrant, ensuring that you avoid burning it.
