2 cups Greek yogurt (choose plain for simplicity or flavored for added taste)

1/2 cup honey or maple syrup (adjust sweetness to your preference)

1 cup mixed berries (a combination of strawberries, blueberries, and raspberries)

1 teaspoon vanilla extract

1/4 cup milk (use dairy or non-dairy based on your choice)

Fresh mint leaves (for optional garnish)

Prepare the Base: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and milk. Whisk together until the mixture is smooth and well-blended. Taste and adjust the sweetness by adding more honey or syrup if desired.

    Blend the Berries: In a separate bowl, take half of the mixed berries and gently mash them using a fork to release their juices. Leave the other half whole to add texture. For a smoother berry flavor, feel free to blend all of the berries together until pureed.

      Combine: Carefully fold the mashed berries into the yogurt mixture, ensuring it's just combined. Then, add the whole berries, distributing them evenly throughout the yogurt mix for delightful pockets of fruit.

        Fill the Molds: Use a spoon to fill your popsicle molds with the yogurt and berry mixture, leaving a tiny space at the top to allow for expansion as they freeze. If you'd like a marbled effect, you can swirl in a bit of extra mashed berries before finishing off.

          Insert Sticks: Position the popsicle sticks into the filled molds, making sure they are standing upright and secure.

            Freeze: Cover the molds with their lids, if available, or wrap them in plastic wrap to prevent any flavors from affecting your popsicles. Freeze for a minimum of 6 hours, or until the popsicles are fully solid.
