Ingredients

4 medium zucchini, spiralized into zoodles

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, finely minced

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for a spicy kick)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Prepare the Zoodles: Begin by spiralizing the zucchini to create zoodles. If you don’t have a spiralizer, you can use a vegetable peeler to slice the zucchini into wide strips. Once prepared, place the zoodles on a clean paper towel and gently pat them dry to remove excess moisture. This step will help prevent the dish from becoming watery.

Sauté the Garlic: Heat a large skillet over medium heat, then add the olive oil. Allow the oil to warm up, and once it’s hot, add the minced garlic. Sauté the garlic for 1-2 minutes, stirring frequently until it becomes fragrant. Be careful to not let it burn, as burnt garlic can impart a bitter taste.

Create the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir to combine the cream with the sautéed garlic. Gradually add the grated Parmesan cheese, along with salt, black pepper, and red pepper flakes if desired. Continue stirring until the cheese completely melts and the sauce is creamy and smooth.

Incorporate the Zoodles: Increase the heat back to medium. Add the zoodles into the skillet and toss them well to ensure they are evenly coated with the creamy garlic Parmesan sauce. Cook for about 2-4 minutes, or until the zoodles are tender yet still al dente. Stir occasionally to promote even cooking but avoid overcooking them, as you want to maintain a slight crunch.

Plate and Serve: Once the zoodles are cooked to your liking, remove the skillet from heat. Garnish the dish with freshly chopped parsley for a burst of color and flavor. Serve immediately for the best texture and enjoy warm.
