8 oz (225g) pasta of your choice (fettuccine or spaghetti recommended)

2 cups (300g) fresh mushrooms, sliced (cremini or button mushrooms)

4 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: A pinch of red pepper flakes for an added kick

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted and bubbling, add the sliced mushrooms. Sauté the mushrooms for about 5-7 minutes, stirring occasionally, until they turn golden brown and release their moisture.

      Add Garlic: Stir in the minced garlic and continue to sauté for another 1-2 minutes, until the garlic is fragrant. Be careful not to let it burn, as this can turn the sauce bitter.

        Create the Sauce: Reduce the heat to medium-low and pour in the heavy cream, stirring well to combine with the mushrooms. Allow the mixture to simmer for about 3-4 minutes, until slightly thickened.
