Creamy Garlic Chicken and Spinach Skillet

1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

3 cups fresh spinach

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper to taste

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with a generous pinch of salt, freshly ground black pepper, and Italian seasoning evenly.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat until it shimmers. Add the seasoned chicken breasts to the pan and cook for about 6-7 minutes on each side, or until they have a nice golden-brown crust and are cooked through. Once done, remove the chicken from the skillet and place it on a plate, keeping it warm.

      Sauté Garlic: With the same skillet still over medium heat, add the minced garlic. Sauté for about 1 minute, stirring constantly, until the garlic is fragrant and lightly golden—be careful not to allow it to burn.

        Make the Cream Sauce: Pour in the chicken broth, using a wooden spoon to scrape up the browned bits from the bottom of the skillet. This will enhance the flavor of your sauce. Allow the broth to simmer for 2-3 minutes. Then, gradually add the heavy cream and stir well. Let the mixture simmer for another 3-4 minutes until it thickens slightly and becomes creamy.

          Combine Spinach and Chicken: Add the fresh spinach to the skillet, stirring continuously until it wilts down. Once the spinach is wilted, return the seared chicken breasts to the skillet and ladle some of the creamy sauce over the top.

Let everything simmer together for an additional 2-3 minutes, and taste to adjust the seasoning with extra salt, pepper, and red pepper flakes according to your preference.
