2 large cucumbers, peeled and roughly chopped

2 ripe avocados, halved, pitted, and scooped out

1 cup Greek yogurt (substitute with dairy-free yogurt for a vegan version)

1 cup chilled vegetable broth

2 tablespoons freshly squeezed lime juice

2 tablespoons fresh dill, finely chopped (plus extra for garnish)

1 garlic clove, minced

Salt and freshly ground black pepper to taste

Optional garnishes: sliced radishes and cucumber ribbons

Instructions
 

In a high-speed blender or food processor, add the chopped cucumbers, avocado flesh, Greek yogurt, chilled vegetable broth, lime juice, chopped dill, and minced garlic.

    Blend the ingredients on high speed until the mixture is smooth and creamy. If the consistency is too thick for your liking, gradually add additional vegetable broth until you achieve the desired creaminess.
