Creamy Cauliflower Mac & Cheese

1 medium head of cauliflower, cut into bite-sized florets

8 oz elbow macaroni (or gluten-free pasta of your choice)

2 cups sharp cheddar cheese, freshly shredded

1 cup mozzarella cheese, freshly shredded

1 cup milk (whole or plant-based)

1/2 cup cream cheese, softened to room temperature

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons all-purpose flour (or gluten-free flour)

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/4 cup breadcrumbs (optional for topping)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook Cauliflower: Bring a large pot of salted water to a rolling boil. Carefully add the cauliflower florets and blanch them for about 4-5 minutes, or until they are slightly tender but still crisp. Use a slotted spoon to remove the florets and set them aside. Keep the boiling water to cook the pasta.

    Cook Pasta: In the same pot of boiling water, add the elbow macaroni and cook according to the package instructions until it reaches al dente texture. Once done, drain the pasta using a colander, reserving one cup of the starchy pasta water, and set both the pasta and water aside.

      Make Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour while whisking continuously for about 1 minute to create a smooth roux. Gradually pour in the milk, whisking continuously until the mixture starts to simmer.

        Add Cheese: Once the milk is heated through, lower the heat and incorporate the softened cream cheese, whisking until it is fully melted and well blended. Gradually stir in the shredded cheddar and mozzarella cheese, mixing until the sauce is creamy and completely smooth.

          Season the Sauce: Add the Dijon mustard, garlic powder, onion powder, along with an appropriate amount of salt and pepper to taste. If the cheese sauce becomes too thick, slowly add in some of the reserved pasta water until your desired creamy consistency is achieved.

            Combine Ingredients: Gently fold the cooked macaroni and the blanched cauliflower florets into the cheese sauce, stirring to ensure everything is evenly coated. Taste and adjust the seasoning as necessary.

              Prepare for Baking (optional): If you prefer a baked mac and cheese, preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish. For an extra crispy top, sprinkle breadcrumbs over the mixture and add additional cheese if desired.

                Bake: Place the dish in the preheated oven and bake for approximately 20-25 minutes, or until the top is golden brown and bubbly.
