Creamy Cauliflower Mac & Cheese

1 medium head of cauliflower, chopped into florets (approximately 4 cups)

8 oz elbow macaroni (or any pasta variety you prefer)

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened at room temperature

2 cups milk (whole milk or a plant-based alternative, such as almond or oat milk)

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional for a crunchy topping)

Fresh parsley, chopped (for garnishing)

Instructions
 

Prepare the Cauliflower: In a large stockpot, bring salted water to a rolling boil. Add the cauliflower florets and cook for about 5-7 minutes, or until they are fork-tender. Use a slotted spoon to remove the cauliflower and set it aside. Keep the boiling water on the heat for the pasta.

    Cook the Pasta: Using the same pot of water, add the elbow macaroni and cook according to the package instructions until al dente, roughly 8-10 minutes. Once cooked, drain the pasta and set it aside.

      Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2-3 minutes until the mixture forms a roux, which should be a light golden paste.

        Add Milk and Spices: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook while stirring frequently until the mixture thickens and becomes smooth, which should take about 5-7 minutes.

          Incorporate the Cheeses: Lower the heat to medium-low, then add the softened cream cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Stir until the cream cheese is completely melted and integrated into the sauce. Gradually mix in the cheddar and mozzarella cheeses, stirring until the sauce is rich, creamy, and you can no longer see any lumps of cheese.

            Blend the Cauliflower: In a blender or food processor, combine the cooked cauliflower with about 1/2 cup of the cheese sauce. Blend until the mixture is completely smooth and creamy. Pour this blended cauliflower mixture back into the saucepan with the cheese sauce and stir well.

              Combine Pasta and Sauce: Add the drained pasta to the cheese sauce, stirring thoroughly until every piece is well-coated in the creamy goodness.

                Optional Topping: Preheat your oven to 350°F (175°C). If you desire a crunchy topping, transfer the mac and cheese to a greased baking dish. In a small bowl, mix the breadcrumbs with a tablespoon of melted butter, then sprinkle this mixture evenly over the top of the mac and cheese. Bake for 15-20 minutes or until the top is golden brown and the dish is bubbling.

                  Serve: Once baked (if you opted for the topping), remove from the oven and let it cool for a few minutes. Garnish generously with chopped parsley before serving. Enjoy your indulgent yet nutritious creamy cauliflower mac & cheese!
