1 lb (450g) carrots, peeled and chopped into bite-sized pieces

1 medium onion, diced

2 cloves garlic, minced

1-inch piece fresh ginger, peeled and finely grated

4 cups vegetable broth

1 cup coconut milk

2 tablespoons extra virgin olive oil

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent. Next, add the minced garlic and grated ginger, cooking for an additional 2 minutes until they release a fragrant aroma.

    Add Carrots and Spices: Stir in the chopped carrots, ensuring they are well-coated with the sautéed onion mixture. Sprinkle in the ground cumin and turmeric, and cook for another 5 minutes, allowing the spices to infuse into the vegetables.
