Ingredients

1 lb large shrimp, peeled and deveined

4 oz Andouille sausage, diced

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced (approximately 2 cups)

1 cup corn kernels (can be fresh or frozen)

1 red bell pepper, chopped

4 cups chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1 tablespoon lemon juice for a bright finish

Instructions

Sauté the Andouille: In a large pot, heat the olive oil over medium heat. Once hot, add the diced Andouille sausage. Sauté for about 4-5 minutes until it begins to brown and release its flavorful oils.

Add Aromatics: Incorporate the finely chopped onion, red bell pepper, and minced garlic into the pot. Continue to sauté for approximately 3-4 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Cook the Potatoes: Add the diced potatoes along with the Cajun seasoning to the pot. Stir well to coat the potatoes with the seasoning, allowing them to absorb all the flavors. Cook for an additional 2-3 minutes.

Pour in Broth: Carefully add the 4 cups of chicken broth to the mixture. Increase the heat to bring it to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes, or until the potatoes are tender.

Add Corn and Shrimp: Stir in the corn kernels and the shrimp. Cook for an additional 5-7 minutes, stirring occasionally, until the shrimp turn a vibrant pink and are fully cooked.

Cream it Up: Lower the heat again and fold in the heavy cream. Sprinkle in the smoked paprika, and season with salt and pepper to taste. If desired, add the lemon juice at this stage to brighten the flavors.

Serve: Ladle the hot chowder into bowls, garnishing each with a generous sprinkle of freshly chopped parsley. Enjoy this warm, creamy Cajun delight perfect for a cozy meal!
