8 oz fettuccine pasta

2 boneless, skinless chicken breasts (approximately 1 lb)

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 small onion, finely diced

3 cloves garlic, minced

1 bell pepper (red or green), sliced into thin strips

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package directions until al dente, usually about 8-10 minutes. Drain and set the pasta aside in a large bowl.

    Season the Chicken: While the pasta cooks, pat the chicken breasts dry with a paper towel. Generously rub the Cajun seasoning over both sides of the chicken, ensuring an even coating for maximum flavor.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. When hot, carefully place the seasoned chicken breasts in the skillet. Cook for 6-7 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing it into strips.

        Sauté the Vegetables: In the same skillet (do not wipe it clean), add the diced onion and sliced bell pepper. Sauté for 3-4 minutes, stirring occasionally, until the vegetables are tender. Add the minced garlic and sauté for an additional minute, or until fragrant and golden.

          Make the Sauce: Pour the chicken broth into the skillet and bring it to a simmer. Use a wooden spoon to scrape the bottom of the pan, deglazing it and incorporating all the flavorful bits. Gradually stir in the heavy cream, ensuring it combines smoothly, then allow it to gently simmer.

            Combine Cheese and Pasta: Lower the heat to low, and sprinkle the grated Parmesan cheese into the sauce, stirring until it melts and the sauce becomes creamy. Taste and season with salt and pepper as desired. Add the cooked fettuccine to the skillet, tossing well to ensure the pasta is evenly coated with the creamy sauce.

              Incorporate Chicken: Slice the rested chicken breasts into strips and arrange them on top of the creamy pasta. Gently toss everything together until well combined, ensuring the chicken is coated in the sauce.
