Creamy Cajun Chicken Alfredo

Prepare the Chicken: Begin by ensuring the chicken breasts are patted dry. Evenly coat both sides with Cajun seasoning, pressing down gently to help the spices adhere and maximize flavor.

    Cook the Pasta: In a large pot, fill with water and season generously with salt. Bring to a rolling boil. Add the fettuccine pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once done, drain the pasta, but reserve 1 cup of the pasta water for later use.

      Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. When the oil shimmers, carefully place the seasoned chicken breasts into the skillet. Sear for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown crust. Remove the chicken from the skillet and let it rest on a cutting board for a few minutes before slicing it into thin strips.
