2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

4 cups vegetable broth

2 medium carrots, peeled and diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

4 cups fresh broccoli florets

1 cup heavy cream (substitute with coconut milk for a dairy-free alternative)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Zest of 1 lemon for a burst of brightness

In a large pot, warm the olive oil over medium heat. Add the finely diced onion and sauté until it becomes translucent, about 5 minutes.

    Incorporate the minced garlic into the pot, cooking for an additional minute until fragrant and aromatic.

      Add the diced carrots and celery to the onion and garlic mixture. Stir occasionally and sauté for about 5 minutes, allowing the vegetables to soften.

        Pour in the vegetable broth and bring the mixture to a gentle simmer. Add the rinsed wild rice along with the dried thyme, oregano, and bay leaf. Cover the pot and let it simmer for approximately 40-45 minutes, or until the wild rice is tender and has burst open.

          Once the wild rice is cooked, gently stir in the broccoli florets. Cook for an additional 5-7 minutes, just until the broccoli is tender yet retains its bright green color.

            Remove the bay leaf and stir in the heavy cream (or coconut milk) to create a rich and creamy consistency. Season the soup with salt and pepper to taste.
