Ingredients

8 oz fettuccine pasta

6 slices of bacon, chopped

3 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons garlic, minced (about 4 cloves)

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Fresh parsley, finely chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook as per package instructions until al dente, usually around 8-10 minutes. Before draining, reserve 1/2 cup of the pasta water; then drain the remaining water and set the pasta aside.

Cook the Bacon: Heat a large skillet over medium heat, and add the chopped bacon. Cook, stirring occasionally, until the bacon turns crispy and golden, about 5-7 minutes. Once cooked, use a slotted spoon to transfer the bacon to a plate lined with paper towels to absorb excess grease. Keep the drippings in the skillet as they will add flavor to the dish.

Sauté Spinach and Garlic: In the same skillet, if needed, add a tablespoon of olive oil to maintain some fat in the pan. Add the minced garlic and sauté for about 1 minute until it becomes fragrant and lightly golden. Then, add the chopped spinach and cook, stirring frequently, until wilted, which should take about 2-3 minutes.

Make the Alfredo Sauce: Reduce the heat to low and pour the heavy cream into the skillet. Allow it to gently simmer while you stir in the grated Parmesan cheese. Mix continuously until the cheese melts and the sauce is smooth. If the sauce seems too thick, gradually add a bit of the reserved pasta water until achieving the desired creamy consistency. Season the sauce with salt, fresh black pepper, and red pepper flakes if you're using them.

Combine Ingredients: Add the drained fettuccine and crispy bacon back into the skillet with the creamy Alfredo sauce. Toss everything together until the pasta and bacon are evenly coated with the rich sauce, ensuring each strand of fettuccine is enveloped in goodness.

Garnish and Serve: Remove the skillet from the heat. Sprinkle the pasta with chopped fresh parsley for a touch of color and freshness. Serve immediately, enjoying the creamy, savory delight while warm!

Presentation Tips: Serve the pasta in shallow bowls, drizzling any remaining sauce from the skillet over the top. You can add an extra sprinkle of Parmesan and a few more red pepper flakes for a beautiful finishing touch.
