Cranberry Apple Crumble Pie

For the Pie Filling:

3 medium apples (preferably Granny Smith or Honeycrisp), peeled, cored, and sliced

1 cup fresh cranberries (can substitute with frozen, thawed)

1/2 cup granulated sugar

1 tablespoon freshly squeezed lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch

For the Crust:

1 1/4 cups all-purpose flour

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cut into small cubes

1/4 cup granulated sugar

1 to 2 tablespoons ice water

For the Crumble Topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Instructions
 

Prepare the Pie Crust:

    - In a mixing bowl, whisk together 1 1/4 cups of all-purpose flour and 1/2 teaspoon of salt until well combined.

      - Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the mixture until it resembles coarse crumbs, with pea-sized bits of butter remaining.

        - Stir in 1/4 cup of granulated sugar to sweeten the crust. Then, add ice water, one tablespoon at a time, mixing until the dough begins to hold together.

          - Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow it to firm up.

            Make the Filling:

              - In a large mixing bowl, combine the sliced apples and fresh (or thawed) cranberries.

                - Add in 1/2 cup of granulated sugar, lemon juice, ground cinnamon, ground nutmeg, and cornstarch. Gently toss the mixture until all the fruit is evenly coated in the sweet, spiced mixture. Set aside while you prepare the crust.

                  Preheat the Oven:

                    - Preheat your oven to 375°F (190°C) to get it ready for baking.

                      Roll Out the Crust:

                        - On a lightly floured surface, roll out the chilled dough into a circle approximately 12 inches in diameter.

                          - Carefully transfer the rolled-out dough into a 9-inch pie pan, trimming off any excess dough that overhangs the edges.

                            Add the Filling:

                              - Spoon the apple and cranberry mixture into the prepared pie crust, spreading it out evenly to ensure every slice has a delightful mix.

                                Prepare the Crumble Topping:

                                  - In a medium bowl, combine the old-fashioned oats, 1/2 cup of all-purpose flour, packed brown sugar, melted butter, ground cinnamon, and salt. Stir until the mixture is crumbly and well mixed.

                                    - Generously sprinkle the crumble topping over the fruit filling, ensuring it covers the entire surface.

                                      Bake:

                                        - Place the pie in the preheated oven and bake for 45 to 50 minutes, or until the filling is bubbling and the crumble topping has turned a golden brown.

                                          Cool & Serve:

                                            - Once baked, allow the pie to cool for at least 15-20 minutes before slicing to let the filling set slightly. Serve warm or at room temperature. For an extra treat, consider adding a scoop of vanilla ice cream or a dollop of whipped cream on top.
