2 cups fresh corn kernels (approximately 4 ears of corn)

2 ripe avocados, diced into bite-sized pieces

1 red bell pepper, diced for crunch

1 small red onion, finely chopped for sweetness

1 cup cherry tomatoes, halved for freshness

1/4 cup fresh cilantro, chopped for herbiness

Juice of 1 lime for zest

2 tablespoons honey for sweetness

1 tablespoon extra virgin olive oil for richness

    Combine Vegetables: In a sizable mixing bowl, gently combine the cooled corn, diced avocados, diced red bell pepper, finely chopped red onion, and halved cherry tomatoes. Toss everything lightly to mix, being sure to keep the avocado pieces intact.
