2 (15.25 oz) packages of Mint Oreo cookies

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 (8 oz) package cream cheese, softened to room temperature

1 cup plain or vanilla yogurt

1 cup semi-sweet chocolate chips (optional for garnish)

Fresh mint leaves (for garnish, optional)

Prepare the Cream Mixture: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy, about 2 minutes. Gradually add in the powdered sugar and vanilla extract, mixing on low speed until well combined. In a separate clean bowl, whip the heavy cream until stiff peaks form, which usually takes about 4-5 minutes. Gently fold the whipped cream into the cream cheese mixture using a spatula, working carefully to keep the mixture light and airy.

    Prepare the Oreos: Open one package of Mint Oreos and gently twist the cookies to separate the cream filling from the cookies. Set the cream-filled halves aside, as you will be using the cookies for layering the cake.

      Assemble the Cake Base: In a rectangular or square baking dish (approximately 9x9 inches), lay down a single layer of the Oreo cookies on the bottom, making sure they are flat. If you prefer a softer texture, you can dip each cookie briefly in milk before laying them down.
