8 oz (about 225g) pasta (fusilli or penne recommended)

1 can (5 oz or 150g) tuna packed in olive oil, drained

1 cup cherry tomatoes, halved

1 cup cucumber, diced into small cubes

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup high-quality extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches al dente (firm to the bite). Once cooked, drain the pasta in a colander and rinse under cold running water to stop the cooking process. Allow it to cool completely while you prepare the other ingredients.

    Prepare the Vegetables: As the pasta cools, carefully chop the cherry tomatoes, cucumber, and red onion. Halve the cherry tomatoes, ensuring even sizing for consistency. Dice the cucumber into small, uniform cubes for a pleasant texture, and finely chop the red onion to enhance the flavor profile.

      Mix the Ingredients: In a large mixing bowl, combine the cooled pasta with the drained tuna, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, chopped parsley, and crumbled feta cheese. Gently mix these ingredients together to create an even distribution.

        Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and freshly ground black pepper. Continue whisking until the dressing is well emulsified, becoming a silky mixture that will complement the salad.
