Ingredients

8 oz (225 g) rice noodles

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust to taste)

2 cloves garlic, minced

1 teaspoon grated ginger

1/4 cup warm water (adjust for desired sauce consistency)

1 red bell pepper, julienned

1 cup shredded carrots

1 cup thinly sliced cucumber

1/4 cup chopped green onions

1/4 cup chopped fresh cilantro

1/4 cup crushed peanuts (for garnish)

Lime wedges (for serving)

Instructions

Cook the Rice Noodles:

In a large pot, bring enough water to a rolling boil. Once boiling, gently add the rice noodles and cook according to the package instructions, usually about 4-6 minutes, until they are al dente. Once cooked, drain the noodles in a colander and immediately rinse under cold water to stop the cooking process and cool them down. Set aside.

      Prepare the Peanut Sauce:

In a medium mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sriracha, minced garlic, grated ginger, and warm water. Using a whisk, blend these ingredients until the sauce is smooth and well-combined. If the sauce is thicker than desired, gradually stir in more warm water until you achieve your preferred consistency.

          Combine the Vegetables and Noodles:

In a large mixing bowl, gently combine the cooled rice noodles, julienned red bell pepper, shredded carrots, thinly sliced cucumber, chopped green onions, and fresh cilantro. Toss the ingredients together lightly to mix them evenly.

              Incorporate the Peanut Sauce:

Drizzle the prepared peanut sauce over the noodle and vegetable blend. Toss everything thoroughly to ensure each ingredient is generously coated with the delicious sauce.

                  Chill the Noodles:

Cover the bowl tightly with plastic wrap or a lid and place it in the refrigerator. Let the noodles chill for at least 30 minutes; this not only cools the dish but also allows the flavors to meld beautifully.

                      Serve:

Prior to serving, give the noodles a gentle toss to redistribute the sauce. Spoon the vibrant chilled noodle salad into bowls, and generously garnish with crushed peanuts and lime wedges for an added burst of flavor. Enjoy your refreshing Cold Thai Peanut Noodles as a delightful meal!
