Ingredients

8 oz rice noodles

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cucumber, julienned

1 cup fresh bean sprouts

1/4 cup fresh cilantro, roughly chopped

1/4 cup green onions, chopped (white and green parts)

1/4 cup crushed peanuts (optional, for garnish)

For the Dressing:

3 tablespoons soy sauce

2 tablespoons fresh lime juice

1 tablespoon fish sauce (or tamari for a vegetarian option)

1 tablespoon honey or agave syrup

1 teaspoon sesame oil

1 teaspoon sriracha (adjust according to your spice preference)

1 garlic clove, minced

Instructions

Prepare the Noodles: In a large pot, bring about 4 quarts of water to a rolling boil. Add the rice noodles and cook for 5-7 minutes, or until they reach al dente as per package instructions. Drain the noodles in a colander and rinse them under cold running water until thoroughly chilled. Set aside to drain completely.

Make the Dressing: In a small mixing bowl, combine the soy sauce, fresh lime juice, fish sauce (or tamari), honey (or agave syrup), sesame oil, sriracha, and minced garlic. Whisk everything together until fully blended. Taste the dressing and adjust the seasoning if necessary, adding additional lime juice for acidity or honey for sweetness.

Combine Ingredients: In a large mixing bowl, combine the cooled rice noodles, thinly sliced red bell pepper, shredded carrots, julienned cucumber, fresh bean sprouts, chopped cilantro, and green onions.

Dress the Salad: Drizzle the prepared dressing over the noodle mixture. Using tongs or two large spoons, gently toss the salad until all the ingredients are well coated in the dressing.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This chilling time allows the flavors to meld beautifully, resulting in a more delicious salad.

Serve: When ready to serve, give the salad a gentle toss to redistribute the dressing. If using, sprinkle crushed peanuts on top for added crunch. Serve the salad chilled and enjoy your refreshing Chilled Thai Noodle Delight!
