8 oz rotini pasta

1 cup fresh baby spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1/2 cup cherry tomatoes, halved

1/3 cup red onion, finely diced

1/2 cup grated Parmesan cheese

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tbsp olive oil

2 tbsp fresh lemon juice

1 tsp garlic powder

Salt and freshly ground black pepper to taste

Optional: 1/4 cup sliced black olives and fresh parsley for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process. Set aside to cool.
