Ingredients
  

1 cup couscous

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/2 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

Salt and black pepper to taste

4 large lettuce leaves (such as iceberg or romaine)

Whole wheat wraps or tortillas

Instructions
 

Prepare the Couscous: In a medium saucepan, bring 1 1/4 cups of water to a rolling boil. Once boiling, remove the saucepan from heat and stir in 1 cup of couscous. Cover the saucepan and let it sit undisturbed for about 5 minutes until the couscous has absorbed all the water. Fluff the couscous with a fork to separate the grains and allow it to cool.

    Mix the Dressing: In a small bowl, combine 1/4 cup of olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of ground cumin, and a pinch of salt and black pepper. Whisk the ingredients together until well blended. Set aside for the flavors to meld.

      Combine the Ingredients: In a large mixing bowl, combine the cooled couscous, drained chickpeas, halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, chopped parsley, and crumbled feta cheese (if you're using it). Pour the dressing over the mixture and gently toss all the ingredients together until they are evenly coated.
