8 oz rice noodles

1 cup shredded carrots

1 cup red bell pepper, julienned

1 cup cucumber, thinly sliced

½ cup red cabbage, shredded

¼ cup green onions, finely chopped

1 cup cooked chicken, shredded (optional)

1 tbsp sesame seeds (for garnish)

Peanut Sauce:

¼ cup creamy peanut butter

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tbsp sesame oil

1-2 tsp sriracha (optional, for a spicy kick)

2-3 tbsp warm water (to thin out the sauce)

Cook the Noodles: Begin by bringing a large pot of water to a rolling boil. Once boiling, add the rice noodles and cook according to the package instructions until they are just tender. Once cooked, drain the noodles and rinse them thoroughly under cold running water to halt the cooking process. Transfer the noodles to a mixing bowl and set aside.

Continue to whisk until the mixture is smooth and well combined.
