Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend for optimal juiciness)

1 cup plain or Italian breadcrumbs

1 cup onion, finely chopped

½ cup bell pepper, finely diced (choose either red or green for color)

2 cloves garlic, minced

2 large eggs, beaten

½ cup milk (whole or 2% for creaminess)

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional, for added smokiness)

For the Tangy Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon Worcestershire sauce

½ teaspoon onion powder

¼ teaspoon garlic powder

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it’s hot and ready for baking.

Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, diced bell pepper, minced garlic, beaten eggs, milk, Worcestershire sauce, Dijon mustard, dried thyme, dried parsley, salt, black pepper, and smoked paprika (if desired).

Mix Thoroughly: With your hands or a spatula, gently mix the ingredients until just combined. Avoid overmixing, as this can lead to a dense meatloaf.

Shape the Loaf: Transfer the meat mixture to a 9x5 inch loaf pan. Press the mixture gently to form an even shape, smoothing out the top for an appealing finish.

Make the Glaze: In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, onion powder, and garlic powder until the mixture is smooth and well blended.

Apply the Glaze: Pour approximately half of the glaze mixture over the top of the meatloaf, evenly spreading it with a spatula for full coverage.

Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for about 1 hour, or until the internal temperature of the meatloaf reaches 160°F (70°C).

Add More Glaze: About 40 minutes into the baking time, brush the remaining glaze over the meatloaf to enhance its flavor and give it a glossy finish.

Rest Before Slicing: Once fully baked, remove the meatloaf from the oven and allow it to rest for 10-15 minutes. This resting period helps the juices redistribute, making it easier and cleaner to slice.

Slice and Serve: Carefully transfer the meatloaf to a cutting board. Slice it into thick portions and serve hot, paired with your favorite sides such as creamy mashed potatoes or crisp steamed vegetables.

Prep Time: 15 minutes | Total Time: 1 hour 30 minutes | Servings: 6-8 slices

                        - Presentation Tips: For an inviting presentation, serve the meatloaf slices on a platter, drizzled with additional glaze, and garnish with fresh herbs like parsley or thyme.
