Prepare the Kiwis: Start by carefully peeling the kiwis. Cut each kiwi into 1/2-inch thick rounds; you should yield about 5-6 slices from each kiwi, resulting in approximately 20-24 slices in total.

    Freeze the Kiwi Slices: Line a baking sheet with parchment paper. Arrange the kiwi slices in a single layer on the sheet, making sure they do not overlap. Transfer the baking sheet to the freezer and let the kiwis freeze for at least 1-2 hours until they are completely solid.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if you choose to use it). Heat the mixture in the microwave in 30-second intervals, stirring vigorously between each interval. Continue until the chocolate is fully melted, smooth, and well combined.

        Dip the Kiwi: After the kiwi slices have frozen, take them out of the freezer. Immerse each slice halfway into the melted chocolate, allowing any excess chocolate to drip back into the bowl. Work quickly to ensure the kiwis stay frozen.
