1 lb ground beef or ground turkey

1 packet chili seasoning mix

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup shredded sharp cheddar cheese

12 slider-sized buns

1 small red onion, finely chopped

1 jalapeño, thinly sliced (optional for extra heat)

1 cup sour cream

Fresh cilantro, chopped (for garnish)

Olive oil, for cooking

Salt and black pepper to taste

Instructions
 

Prepare the Chili Base: In a large skillet, drizzle a small amount of olive oil and heat over medium heat. Add the finely chopped red onion and sauté for about 3-4 minutes, or until the onion is soft and translucent.

    Brown the Meat: Add the ground beef or turkey to the skillet with the sautéed onions. Season with salt and black pepper, then cook for 5-7 minutes, using a spatula to break the meat into small pieces. Cook until the meat is nicely browned and no longer pink.

      Incorporate Beans and Tomatoes: Stir in the packet of chili seasoning mix, drained kidney beans, and diced tomatoes with green chilies. Bring the mixture to a simmer, allowing it to cook for approximately 10 minutes. Stir occasionally to prevent sticking and ensure even heating.

        Melt the Cheese: Preheat your oven to 350°F (175°C). Once the chili mixture has thickened, remove it from heat and stir in half of the shredded cheddar cheese until melted and well combined.

          Prepare the Sliders: Slice the slider-sized buns in half to create the top and bottom halves. On a baking sheet lined with parchment paper, arrange all the bottom halves of the buns. Spoon a generous amount of the chili mixture onto each bun, followed by a sprinkling of the remaining shredded cheddar cheese. Cap each with the top halves of the buns.

            Bake the Sliders: Place the assembled sliders in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbling and the buns are slightly golden and toasted.
