1 pound grilled chicken breast, sliced into thin strips

1 cup hummus (store-bought or homemade)

4 large whole wheat tortillas

1 cup fresh spinach leaves

1 medium cucumber, thinly sliced

1 large carrot, grated

1 bell pepper (red or yellow), sliced into thin strips

1 ripe avocado, sliced

1/2 red onion, thinly sliced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and black pepper, to taste

Fresh parsley or cilantro, for garnish (optional)

Prepare the Chicken: If you haven't done so, season the chicken breasts with salt and pepper. Grill them over medium heat for about 6-7 minutes per side, or until they’re fully cooked (internal temperature of 165°F). Let the grilled chicken rest for a few minutes before slicing it into thin strips.

    Create the Veggie Mix: In a mixing bowl, combine the thinly sliced cucumbers, grated carrots, sliced bell pepper, and red onion. Drizzle the mixture with olive oil and lemon juice, then season with salt and black pepper. Toss gently until all ingredients are well coated.

      Spread the Hummus: Place each tortilla on a clean, flat surface. Use a spatula or the back of a spoon to spread an even layer of hummus (about 1/4 cup) over the center of each tortilla, leaving about an inch of space around the edges for filling.
