2 green onions, finely chopped

2 cloves garlic, minced

1/4 teaspoon black pepper

Prep the Zucchini: Begin by grating the zucchinis using a box grater until finely shredded. Transfer the grated zucchini to a clean kitchen towel or cheesecloth. Sprinkle 1 teaspoon of salt over the zucchini and allow it to rest for about 10-15 minutes. This process will help draw out excess moisture. After resting, twist the towel to squeeze out as much liquid as possible, ensuring the zucchini is dry.

    Mix the Ingredients: In a large mixing bowl, add the drained, grated zucchini, flour, Parmesan cheese, mozzarella cheese, beaten egg, chopped green onions, minced garlic, black pepper, and paprika (if using). Stir everything together until well combined; the mixture should hold together well. If it feels too wet, gradually incorporate a little more flour until the desired consistency is reached.
