1/4 cup fresh parsley, chopped (plus extra for garnish)

2 large eggs

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Prepare the Baking Dish: Begin by preheating your oven to 375°F (190°C). While the oven heats, generously grease a 9x13 inch baking dish with cooking spray or a light drizzle of olive oil to prevent sticking.

        Prepare the Cheese Mixture: In a large mixing bowl, combine the shredded cheddar, mozzarella, half of the grated Parmesan cheese, and the chopped parsley. Gently fold in the slightly cooled zucchini mixture until everything is evenly distributed.
