Ingredients

1 pound ground turkey

1 medium head of cauliflower, cut into bite-sized florets

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

½ cup cream cheese, softened to room temperature

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon Italian seasoning

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

¼ cup chopped fresh parsley, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Cauliflower: Fill a large pot with water and add a generous pinch of salt. Bring the water to a rolling boil. Add the cauliflower florets to the pot and blanch for approximately 5 minutes, or until they are just tender with a slight crunch. Use a colander to drain the florets and set them aside.

Sauté the Vegetables: In a large skillet, heat one tablespoon of olive oil over medium heat. Once hot, add the finely chopped onion. Sauté the onion for about 3-4 minutes, or until it becomes translucent and tender. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, stirring frequently to avoid browning.

Brown the Turkey: Add the ground turkey to the skillet, using a wooden spoon to break it apart into smaller pieces. Cook for about 6-8 minutes, stirring occasionally, until the turkey is browned and fully cooked through. Season the turkey mixture with Italian seasoning, garlic powder, onion powder, along with salt and pepper to taste.

Create the Cheese Sauce: In a separate bowl, combine the softened cream cheese, chicken broth, half of the shredded mozzarella, and half of the grated Parmesan cheese. Whisk vigorously until the mixture is smooth and well blended.

Combine the Ingredients: In a large mixing bowl, combine the cooked turkey and onion mixture, the blanched cauliflower florets, and the creamy cheese sauce. Stir thoroughly to ensure all ingredients are evenly coated with the sauce.

Transfer to Baking Dish: Lightly grease a 9x13 inch baking dish. Pour the turkey and cauliflower mixture into the dish, spreading it out evenly. Top with the remaining mozzarella cheese and Parmesan cheese, ensuring a cheesy crust.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown on top.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes. Before serving, garnish with freshly chopped parsley for a touch of color and freshness.
