Cheesy Mushroom and Onion Quesadillas

2 cups mushrooms (button or cremini), sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (a blend of mozzarella and cheddar)

1/2 cup fresh spinach (optional)

Fresh cilantro or parsley for garnish

Sour cream or guacamole for serving

Instructions
 

Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onions and sauté for approximately 3 minutes, or until they begin to soften. Next, add the sliced mushrooms along with the garlic powder, dried thyme, salt, and pepper. Cook this mixture for an additional 7-10 minutes, stirring occasionally, until the mushrooms turn golden brown and the onions caramelize. If you decide to use spinach, fold it in during the last minute of cooking, allowing it to wilt slightly.

    Prepare Quesadilla Filling: Once the vegetable mixture is cooked and fragrant, remove it from the heat and allow it to cool for a few minutes. In a mixing bowl, combine the sautéed mushroom and onion mixture with most of the shredded cheese, leaving a small portion aside to sprinkle on top later.

      Assemble Quesadillas: In a clean skillet (or using the same skillet if it's not too hot), place one tortilla flat on the surface. Spoon a portion of the mushroom and cheese mixture onto one half of the tortilla. Fold the other half over to encase the filling.

        Cook Quesadillas: Place the folded quesadilla in the skillet over medium heat and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is beautifully melted. Once cooked, remove the quesadilla from the skillet and keep it warm in a low oven while you repeat the process with the remaining tortillas.
