4 large russet potatoes, peeled and thinly sliced

8 slices of thick-cut bacon, cooked until crispy and crumbled

1 cup sharp cheddar cheese, freshly shredded

1 cup Monterey Jack cheese, freshly shredded

1 medium onion, finely chopped

1 cup heavy cream

1 cup milk

2 cloves garlic, minced

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon smoked paprika (optional for a hint of smokiness)

½ cup green onions, chopped (for garnish)

½ cup breadcrumbs (optional, for a crunchy topping)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to preheat while you prepare the casserole.

    Prepare the Baking Dish: Lightly grease a 9x13 inch casserole dish with cooking spray or butter to prevent sticking.

      Cook the Bacon: Heat a skillet over medium heat and cook the bacon until it's crispy. Remove the bacon from the skillet and place it on paper towels to drain excess grease. Crumble the bacon into small pieces, keeping about 1 tablespoon of the bacon grease in the skillet for later.

        Sauté the Onions and Garlic: In the skillet with the reserved bacon grease, add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and aromatic.

          Layer the Casserole:

            - Begin by layering half of the sliced potatoes evenly across the bottom of the greased casserole dish.
