1 ½ cups chocolate graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

3 (8 oz) packages of cream cheese, softened to room temperature

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs, at room temperature

1 cup sour cream

8 oz Godiva chocolate (or any high-quality dark chocolate), melted and slightly cooled

¼ cup cocoa powder

2 tablespoons all-purpose flour

For the Ganache Topping:

1 cup heavy whipping cream

8 oz Godiva chocolate, chopped into small pieces

Optional: Whipped cream and chocolate shavings for garnish

Instructions
 

Make the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium mixing bowl, combine the chocolate graham cracker crumbs, melted butter, and granulated sugar. Mix until the ingredients are fully combined and resemble wet sand.

        - Evenly press the mixture into the bottom of a 9-inch springform pan. Use the back of a measuring cup or your fingers for an even layer.

          - Bake the crust in the preheated oven for 10 minutes, then remove it and allow it to cool completely.

            Prepare the Cheesecake Batter:

              - In a large mixing bowl, use an electric mixer on medium speed to beat the softened cream cheese until creamy and smooth, about 2-3 minutes.

                - Slowly add the granulated sugar and vanilla extract, mixing until well incorporated and smooth.

                  - Add the eggs one at a time, mixing on low speed just until blended after each addition. Be careful not to overmix; the batter should remain light and fluffy.

                    Incorporate the Chocolate:
