Ingredients

2 medium carrots, finely grated

2 medium zucchinis, finely grated

1 small onion, diced

2 cloves garlic, minced

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese (optional for added flavor)

1 large egg

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika (or regular paprika)

1/4 cup fresh parsley, finely chopped

1/2 cup Greek yogurt (for serving)

4 large whole wheat tortillas or wraps

Olive oil (for frying)

Instructions

Prepare the Vegetables: Start by grating the carrots and zucchinis using either a box grater or a food processor. After grating, transfer the vegetables to a clean kitchen towel and twist to squeeze out as much moisture as possible. This step is crucial to avoid soggy fritters.

Mix the Batter: In a large mixing bowl, combine the squeezed grated carrots and zucchinis along with the diced onion and minced garlic. Then, add in the flour, Parmesan cheese (if using), egg, baking powder, salt, black pepper, smoked paprika, and chopped parsley. Stir well until all ingredients are thoroughly combined into a uniform batter.

Heat the Pan: Place a large skillet over medium heat and pour in about 2 tablespoons of olive oil, allowing it to heat up.

Cook the Fritters: Once the oil is shimmering, use a scoop or spoon to drop about 2 tablespoons of the mixture into the skillet. Gently flatten each mound into small patties. Cook the fritters for approximately 3-4 minutes on each side, or until they turn golden brown and develop a crispy exterior. Depending on your skillet size, you may need to fry them in batches, adding additional oil as needed.

Warm the Tortillas: While the fritters are cooking, warm the whole wheat tortillas in another skillet for about 30 seconds on each side until they are pliable and easy to fold.

Assemble the Wraps: Once the fritters are crispy and cooked through, place 2-3 fritters onto each warm tortilla. Top with a generous drizzle of Greek yogurt and add any desired garnishes such as sliced avocado, fresh spinach, or diced tomatoes to customize your wrap.

Wrap it Up: Carefully fold the sides of each tortilla over the filling and roll it up tightly to secure the ingredients inside.

Serve: For a delightful presentation, cut the wraps in half if desired, and serve with extra Greek yogurt on the side for dipping.
