1 sheet of puff pastry (thawed if frozen)

3 large onions (preferably yellow or sweet), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon fresh thyme leaves (plus more for garnish)

1 tablespoon balsamic vinegar

Salt and pepper to taste

8 oz Brie cheese, rind removed and cut into thin slices

1 egg (for egg wash)

Optional: fresh arugula (for serving)

Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, gently roll out the puff pastry to fit a tart pan, ensuring it is about a 10-inch round. Gently press the pastry into the pan, making sure it fits snugly against the edges. To prevent puffing, prick the bottom of the pastry with a fork in several places.

    Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat until melted. Add the thinly sliced onions, seasoning them with salt and pepper. Cook the onions, stirring frequently, until they become rich golden brown and caramelized—this should take about 25-30 minutes. Once caramelized, stir in the balsamic vinegar and thyme, cooking for an additional 2-3 minutes before removing the skillet from heat.

      Assemble the Tart: Evenly spread the delicious caramelized onions over the prepared puff pastry, ensuring every bite is flavorful. Layer the slices of Brie cheese on top of the onions, distributing them evenly across the tart.

        Egg Wash: In a small bowl, whisk together the egg with a tablespoon of water until well combined. Use a brush to apply the egg wash to the edges of the puff pastry, which will help achieve a beautiful golden color while baking.
