Ingredients

2 cups pumpkin puree (preferably homemade for the best flavor)

1 large egg, lightly beaten

2 cups all-purpose flour (plus extra for dusting)

1/2 teaspoon salt

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon freshly ground black pepper

1/2 cup unsalted butter

6-8 fresh sage leaves, whole

Grated Parmesan cheese, for serving

Optional: Crushed red pepper flakes, for a spicy kick

Instructions

Prepare the Dough: In a large mixing bowl, combine the pumpkin puree, beaten egg, salt, nutmeg, and ground pepper. Stir until the mixture is smooth and well incorporated. Gradually add one cup of flour, mixing gently until a dough starts to form. Continue to add flour incrementally, just until the dough is soft to the touch, slightly sticky, yet easy to handle.

Knead the Dough: Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough for about 2 minutes, just until smooth. Avoid over-kneading to prevent the gnocchi from becoming dense.

Shape the Gnocchi: Divide the dough into four equal sections. Roll each section into a long rope, approximately 1/2 inch thick. Cut each rope into 1-inch pieces. For a classic gnocchi appearance, roll each piece over the tines of a fork to create ridges, which will help hold the sauce.

Cook the Gnocchi: Fill a large pot with salted water and bring it to a boil. Working in batches, carefully add the gnocchi to the boiling water, being careful not to overcrowd the pot. Allow them to cook until they float to the surface, which should take about 2-3 minutes. Once floating, let them cook for an additional minute. Use a slotted spoon to remove them from the pot and transfer them to a serving plate.

Make the Buttery Sage Sauce: In a large skillet, melt the unsalted butter over medium heat. Once melted, add the sage leaves and sauté until the butter turns golden brown and the sage becomes crispy, about 3-4 minutes. Watch closely to ensure the butter does not burn.

Coat the Gnocchi in Sauce: Add the cooked gnocchi to the skillet with the buttery sage sauce and gently toss to coat them evenly. Cook for an additional 2-3 minutes, allowing them to soak up the flavors and heat through.

Serve: Plate the buttery sage pumpkin gnocchi, generously sprinkle with freshly grated Parmesan cheese, and for an added touch of heat, scatter some crushed red pepper flakes on top if desired.

                Prep Time: 20 minutes | Total Time: 30 minutes | Servings: 4

Enjoy this cozy and comforting dish that's perfect for fall!
