Ingredients

4 cups all-purpose flour

1 packet (2 1/4 tsp) instant yeast

1/4 cup granulated sugar

1 tsp salt

1 cup whole milk, warmed (to around 110°F or 43°C, not boiling)

1/2 cup unsalted butter, melted (reserve 2 tablespoons for brushing)

2 large eggs

4 cloves garlic, minced

1 tbsp fresh rosemary, finely chopped

1 tbsp fresh thyme, finely chopped

1 tsp dried oregano

1/4 cup fresh parsley, finely chopped

1/2 tsp black pepper

Flaky sea salt for topping (optional)

Instructions

Activate the Yeast: In a large mixing bowl, pour the warmed milk and sprinkle the granulated sugar. Gently stir to combine, then sprinkle the instant yeast over the top. Allow the mixture to sit undisturbed for 5-7 minutes, or until it becomes frothy, indicating the yeast is active.

Make the Dough: To the frothy yeast mixture, add the melted butter (holding back 2 tablespoons for later), eggs, minced garlic, chopped rosemary, thyme, oregano, parsley, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

Incorporate the Flour: Gradually add the all-purpose flour to the mixture, one cup at a time. Use a wooden spoon or your hands to mix until a shaggy dough begins to form.

Knead the Dough: Transfer the dough onto a floured surface. Knead the dough for about 8-10 minutes, or until it is smooth and elastic. If the dough feels too sticky, sprinkle in additional flour as needed.

First Rise: Shape the kneaded dough into a ball and place it in a greased bowl. Cover it with a damp cloth or plastic wrap. Allow the dough to rise in a warm area for 1 to 1.5 hours, or until it has doubled in size.

Form the Rolls: Once the dough has risen, gently punch it down to release the air. Pinch off pieces of dough roughly the size of a golf ball, rolling each piece into a smooth ball. Place the balls into a greased 9x13 inch baking dish, arranging them so they are just touching.

Second Rise: Lightly cover the shaped rolls with a cloth. Let them rise again in a warm spot for about 30-45 minutes, or until they look puffy and have risen noticeably.

Preheat the Oven: While the rolls are rising, preheat your oven to 375°F (190°C).

Bake the Rolls: Once risen, brush the tops of the rolls with the reserved melted butter. Optionally, sprinkle flaky sea salt over the tops for an extra burst of flavor. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and fragrant.

Cool and Serve: After baking, remove the rolls from the oven and allow them to cool in the pan for about 5 minutes. Transfer the rolls to a wire rack to cool slightly. Serve warm and immerse yourself in the delightful buttery garlic herb bliss!
