1 medium butternut squash, peeled and cut into 1-inch cubes

12 oz Italian sausage (choose mild or spicy based on your preference), casings removed

1 lb gnocchi (can be store-bought or homemade)

1 cup fresh spinach (or 1/2 cup frozen)

1/2 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

Olive oil for drizzling

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Preheat Your Oven: Set your oven to 400°F (200°C) to ensure it's hot and ready for baking.

    Roast the Butternut Squash: On a large baking sheet, combine the diced butternut squash with 2 tablespoons of olive oil. Season generously with salt, pepper, and dried thyme. Toss to coat evenly, then spread the squash into a single layer. Roast in the preheated oven for 25-30 minutes or until tender and caramelized, turning once halfway through for uniform roasting.

      Cook the Sausage: In a large skillet over medium heat, drizzle in a little olive oil and add the Italian sausage, breaking it apart with a spatula as it cooks. Sauté for about 7-10 minutes until browned and cooked through. Add the minced garlic and continue cooking for an additional minute, or until the garlic is fragrant.

        Combine Ingredients: Once the butternut squash is roasted, transfer it to the skillet with the cooked sausage. Add the spinach, heavy cream, dried oregano, and red pepper flakes (if using). Stir well until the spinach wilts and everything is coated. Taste and adjust the seasoning with salt and pepper as desired.
