Ingredients

4 large russet potatoes

2 cups fresh or frozen broccoli florets

1 cup shredded sharp cheddar cheese

½ cup sour cream

¼ cup milk

2 tablespoons unsalted butter

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon salt (adjust to taste)

¼ teaspoon ground black pepper

¼ teaspoon smoked paprika (optional for extra flavor)

2 tablespoons chopped green onions (for garnish)

¼ cup grated Parmesan cheese (optional, for an extra cheesy topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the potatoes.

Prepare the Potatoes: Thoroughly scrub the russet potatoes under running water to remove any dirt. Using a fork, pierce each potato multiple times to allow steam to escape. Place the potatoes directly on the oven rack and bake them for about 45-60 minutes, or until they can be easily pierced with a fork and are tender throughout.

Cook the Broccoli: While the potatoes are baking, prepare the broccoli. If using fresh broccoli, cut it into florets. For cooking, steaming is ideal, but you can also microwave the florets. For microwave cooking, place the florets in a microwave-safe bowl with a splash of water, cover it, and cook on high for approximately 3-4 minutes until tender. Drain any excess water and chop the broccoli into small pieces.

Mix the Filling: Once the potatoes are baked, carefully remove them from the oven and let them cool for about 10 minutes. After cooling, cut each potato in half lengthwise. Using a spoon, gently scoop out the inside of each potato, leaving about a ¼-inch layer of potato next to the skin to maintain structure.

Combine Ingredients: In a large mixing bowl, combine the scooped potato flesh with the cooked broccoli. Add ¾ cup of the shredded cheddar cheese, sour cream, milk, melted butter, garlic powder, onion powder, salt, black pepper, and smoked paprika (if using). Mash the mixture with a fork or potato masher until creamy and well blended, ensuring all ingredients are evenly incorporated.

Refill the Potatoes: Use a spoon to fill each potato skin with the creamy broccoli cheese mixture, mounding the filling slightly in the center.

Top and Bake Again: Sprinkle the remaining cheddar cheese and Parmesan cheese (if desired) generously over the top of each stuffed potato. Place the filled potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and the tops are golden brown.

Serve: After baking, carefully remove the potatoes from the oven and let them cool for a few minutes. For a garnishing touch, sprinkle chopped green onions over the tops before serving.
