Ingredients

For the Crust:

1 ¾ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

¾ cup unsalted butter, melted (plus additional butter for greasing the pan)

1 teaspoon vanilla extract

For the Blueberry Filling:

2 cups fresh or frozen blueberries (if using frozen, ensure they are thawed)

⅓ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon fresh lemon juice

½ teaspoon lemon zest (finely grated)

¼ teaspoon ground cinnamon

For the Crumb Topping:

¾ cup rolled oats

¾ cup all-purpose flour

½ cup packed brown sugar

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, melted

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Take a 9x9-inch baking pan and generously grease it with butter, or line it with parchment paper for easier removal later on.

      Prepare the Crust:

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined. Gradually stir in the melted butter and vanilla extract until a dough forms. Press this mixture evenly onto the bottom of the prepared baking pan to create a firm crust. Bake in the preheated oven for about 15 minutes, or until it turns lightly golden around the edges.

          Make the Blueberry Filling:

In a separate bowl, gently mix together the blueberries, granulated sugar, cornstarch, lemon juice, lemon zest, and ground cinnamon. Carefully toss the mixture until all the blueberries are evenly coated. Pour this blueberry mixture over the pre-baked crust, spreading it out evenly for consistent flavor in every bite.

              Create the Crumb Topping:

In another bowl, combine the rolled oats, all-purpose flour, packed brown sugar, ground cinnamon, and salt. Pour in the melted butter and stir until the ingredients come together and resemble a coarse crumb texture. Sprinkle this crumb topping generously over the blueberry layer.

                  Bake the Bars:

Place the pan back into the oven and bake for an additional 25 to 30 minutes. Keep an eye on it, baking until the topping is golden brown and the blueberry filling is bubbling beautifully.

                      Cool and Slice:

Once baking is complete, remove the pie bars from the oven and allow them to cool in the pan on a wire rack for at least 30 minutes. After cooling, lift the bars out using the edges of the parchment paper, slice them into squares or rectangles, and they are ready to serve.

                          Serving Suggestion:

Enjoy these delightful blueberry pie bars warm or at room temperature, either on their own or with a decadent scoop of vanilla ice cream or a fluffy dollop of whipped cream!
