1 medium head of cauliflower, cut into small florets

6 strips of thick-cut bacon, cooked until crispy and crumbled

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, finely chopped

1/4 cup green onions, chopped (white and green parts)

1/2 cup shredded cheddar cheese (optional for added creaminess)

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Once done, drain the florets and immediately transfer them to a bowl filled with ice water to halt the cooking process. After they have cooled, drain again and lay the florets on paper towels to dry thoroughly.

    Cook the Bacon: In a skillet over medium heat, cook the bacon strips until they are golden brown and crispy. Remove the cooked bacon from the skillet and place it on a paper towel-lined plate to absorb excess grease. Once the bacon has cooled, crumble it into bite-sized pieces.
