Ingredients

For the Brownies:

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

4 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1 teaspoon baking powder

For the Biscoff Swirl:

1 cup Biscoff cookie butter

1/2 cup crushed Biscoff cookies (for topping)

Optional for Topping:

A drizzle of melted chocolate

A sprinkle of flaky sea salt

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by greasing it lightly and lining it with parchment paper, ensuring there's some overhang to help with removal later.

Melt the Butter: In a medium saucepan over low heat, melt the unsalted butter completely, stirring occasionally to ensure it doesn't burn. Once melted, remove from heat and let it cool for a few minutes.

Combine Wet Ingredients: In a large mixing bowl, combine the cooled melted butter and granulated sugar, whisking until the mixture is smooth and well blended. Add the eggs individually, beating thoroughly after each. Finally, stir in the vanilla extract until fully incorporated.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, salt, and baking powder, ensuring all ingredients are evenly distributed.

Combine the Mixtures: Gradually add the dry ingredient mixture to the wet mixture, gently folding them together with a spatula. Take care not to overmix; you want the batter to be just combined.

Prepare Biscoff Swirl: Scoop the Biscoff cookie butter into a small microwave-safe bowl and heat it in the microwave for about 10-15 seconds to soften it, making it easier to create a swirl in the brownies.

Layer the Batter: Pour half of the brownie batter into the prepared baking pan, spreading it out evenly with a spatula. Drizzle half of the warmed Biscoff cookie butter over this layer, then use a knife or skewer to create a gentle swirl.

Add Remaining Batter: Carefully pour the remaining brownie batter on top of the first layer. Add the remaining Biscoff cookie butter on top of this layer and again swirl it gently with a knife.

Add Cookie Crumble: Sprinkle the crushed Biscoff cookies evenly over the surface of the brownies for a delightful crunch.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes. Check for doneness by inserting a toothpick into the center; it should come out with a few moist crumbs, but not wet batter.

Cool and Serve: Allow the brownies to cool in the pan for at least 20 minutes. Use the parchment overhang to lift them out and transfer to a wire rack to cool completely before slicing into squares. For an extra touch, drizzle with melted chocolate and sprinkle a pinch of flaky sea salt on top just before serving.
