1 cup fresh blueberries

2 tbsp soy sauce

1 tbsp honey

1 tsp fresh ginger, grated

2 cloves garlic, minced

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp cornstarch (optional, for thickening)

1 head of butter lettuce (or iceberg), leaves separated

1/2 cup green onions, chopped

1/4 cup cilantro, chopped (optional)

1 tbsp sesame seeds, for garnish

Prepare the Blueberry Glaze: In a small saucepan, combine the fresh blueberries, soy sauce, honey, grated ginger, minced garlic, sesame oil, and rice vinegar. Place over medium heat and stir gently until the blueberries start to break down and the mixture comes to a gentle boil, which should take about 5-7 minutes. If a thicker glaze is desired, create a cornstarch slurry by mixing 1 tsp of cornstarch with 1 tablespoon of water. Stir this slurry into the sauce and cook for an additional minute until the glaze thickens. Remove from heat and set aside.
