Place the sliced zucchini onto a clean kitchen towel or a few layers of paper towels. Lightly sprinkle them with salt and let them sit for about 10 minutes. This step draws out excess moisture, making the fries crispier. After 10 minutes, pat them dry with another towel.

      Set Up the Breading Station: In a medium bowl, crack and beat the two large eggs until combined.
