Ingredients

12 oz penne pasta

1 lb Italian sausage (select between sweet or spicy based on your preference)

1 medium onion, thinly sliced into rings

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juice

1 cup marinara sauce

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional for heat)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil or parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook until al dente, about 8-10 minutes. Once done, drain the pasta and set aside.

Sauté the Sausage: Heat olive oil in a large skillet over medium heat. Remove the Italian sausage from its casings and crumble it into the skillet. Cook for about 5-7 minutes, stirring often, until the sausage is browned and cooked through.

Add Vegetables: To the skillet, add the sliced onion and both bell peppers. Sauté until the vegetables soften, approximately 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

Combine Ingredients: Stir in the diced tomatoes (with their juices), marinara sauce, oregano, basil, and optional crushed red pepper flakes to the skillet. Carefully fold in the cooked penne pasta, seasoning with salt and pepper to taste. Mix everything until well combined and heated through.

Assemble for Baking: Transfer the pasta and sausage mixture into a greased 9x13 inch baking dish. Evenly sprinkle the shredded mozzarella and grated Parmesan cheeses over the top.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and beautifully golden brown.

Garnish and Serve: After baking, carefully remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley before serving to add a pop of color and flavor.

                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 6-8

Presentation Tips: Serve the dish directly from the baking dish for a rustic look, or portion it out onto individual plates. A light drizzle of olive oil or a squeeze of lemon juice can enhance the flavors before serving.
