1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (choose whole wheat or gluten-free according to your preference)

1/4 cup finely chopped fresh parsley

2 tablespoons tahini

1 tablespoon freshly squeezed lemon juice

2 cloves garlic, minced

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

Olive oil spray (to promote crispiness while baking)

      Make the Falafel Mixture: In a spacious mixing bowl, mash the chickpeas using a fork or a potato masher. Aim for a consistency that is mostly smooth, but still has some texture with small chickpea pieces remaining.

        Incorporate Additional Ingredients: To the mashed chickpeas, add the grated zucchini, breadcrumbs, chopped parsley, tahini, lemon juice, minced garlic, ground cumin, ground coriander, salt, black pepper, and cayenne pepper if you like it spicy.
