2 large eggplants

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1 large egg

3 cups marinara sauce

Prepare the Eggplants: Start by preheating your oven to 400°F (200°C). Cut the eggplants lengthwise into slices about 1/4-inch thick. Arrange the slices on a baking sheet and drizzle lightly with olive oil. Season with salt and pepper to enhance the flavor. Bake in the preheated oven for 20-25 minutes, or until the eggplant is tender and has developed a light golden color.

    Make the Filling: In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, minced garlic, the egg, Italian seasoning, and a pinch of salt and pepper.
