Ingredients

2 ripe avocados

4 large eggs

1/4 cup shredded cheese (choose from cheddar, mozzarella, or your favorite blend)

2 tablespoons freshly chopped chives (or green onions)

Salt and pepper to taste

Optional toppings: diced tomatoes, crispy bacon bits, a splash of hot sauce, or your favorite salsa

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for baking.

Prepare the Avocados: Carefully slice the avocados in half lengthwise and delicately remove the pit. Use a spoon to scoop out a bit of the flesh from each half, creating enough space to hold an egg (set aside the scooped avocado for another dish, or mash it up for a tasty spread).

Arrange for Baking: Place the avocado halves in a small baking dish or a muffin tin to keep them stable and upright while they bake.

Add the Eggs: Crack one egg into each avocado half, taking care not to let it overflow. If an egg is too large and spills over, consider using a smaller egg or gently removing some of the egg whites.

Season and Cheese: Sprinkle each egg with a pinch of salt, a dash of pepper, and half of the shredded cheese to enhance the flavor before baking.

Bake to Perfection: Place the baking dish or muffin tin in the preheated oven and bake for about 12-15 minutes. Keep an eye on them until the egg whites are set but the yolks are still a touch runny, or bake longer if you prefer firmer yolks.

Garnish and Serve: Once done, carefully remove the avocado egg cups from the oven. Top each with the remaining cheese and sprinkle with fresh chives (or green onions). Feel free to add any of the optional toppings you desire for extra flavor.

Enjoy: Serve these delightful avocado egg cups immediately, paired with toasted bread or a refreshing side salad for a complete and satisfying meal.
