2 ripe avocados

1 large tomato, thinly sliced

2 large eggs

4 slices of whole grain or sourdough bread

1 tablespoon extra virgin olive oil

1 teaspoon freshly squeezed lemon juice

Salt and freshly ground black pepper, to taste

Red pepper flakes, optional for a spicy kick

Fresh basil leaves, for a fragrant garnish

Prep the Avocado: Start by cutting the avocados in half. Remove the pit and carefully scoop the flesh into a mixing bowl. Add the lemon juice, a pinch of salt, and a sprinkle of pepper. Using a fork, mash the avocado to your desired consistency - you can leave it chunky for texture. Set this aside to let the flavors meld.

    Toast the Bread: Heat the olive oil in a skillet over medium heat. Once hot, add the slices of bread, toasting each side until they are golden brown and crispy, which should take about 2-3 minutes per side. If you prefer, you can also use a toaster for this step.
